From a compact KitchenAid to professional-level models, these are the best mixers for baking and kneading dough. Not only does it take the hassle out of whisking, whipping, beating and kneading, a stand mixer will also deliver better and more consistent results than doing the same task by hand. From light, springy sponges to the perfect meringue, a versatile stand mixer is the easiest way to bake your way to perfection. Some models can also double up as blenders, food processors or pasta makers to help shake up midweek meals, too. Put simply, a stand mixer will save you both time and effort in the kitchen, leaving more time to eat cake. There are two good reasons for buying a stand mixer.

Kneading dough not only mixes the ingredients, it also increases its elasticity, allowing the yeast to do its job, and leads to the formation of gluten, a binder that ensures bread does not fall apart during baking. Although necessary, kneading bread dough is a laborious process that will lead to sore wrists and an exhausted baker. A bread-dough hook, one of the attachments available for KitchenAid stand mixers, does the kneading for you to ensure your bread rises correctly and comes out chewy and delicious.

Just purchased a new KitchenAid professional to knead the dough. I put all the dry ingredients into the bowl, then I turn the mixer on. I then incorporate the wet ingredients. The problem I am having is that I constantly have to shut the mixer down and scrape the dry ingredients away from the edges. Isn't the wet dough supposed to pull the dry ingredients into the mix?
