Chinese dumplings are a universe unto themselves, and it can be difficult for Westerners to navigate because so many types of dumplings are known by various different names—its Sechzuan name, its Cantonese name, and its pinyin or romanized name. Adding to the confusion, each name can have different spellings. Momos are, in the city of Delhi especially, somewhat of a cult. But there has been one thing that has confused the crap out of Delhiites—what is the difference between Momos, dumplings and dim sums? The reason these phrases are so confusing is that there is a certain overlap and ambiguity when it comes to language. Dim sum is the term used to refer to a style of food from the Cantonese region of China. In fact, dim sums can be all kinds of bite-sized food, like chicken feet and even your favourite spring rolls. In addition to dumplings, dim sum includes rolls, buns, cakes and other assorted items.
That afternoon came back to me five years later when I was in Hong Kong recently, lunching at the Man Wah, a Michelin starred restaurant in the historic Mandarin Oriental Hotel. Man Wah serves Cantonese food. We started off with an assortment of dumplings, moved on to a flavour packed bacon and parsnip puff and then a crunchy puffed rice in lobster soup followed by egg custard and sweet fried sesame buns. Tea was served through the meal. At the end of the meal, Edwina A. Kleunder of the Mandarin Oriental Hotel, and a Hong Kong local, explained the concept of Yum Cha to me - A meal where you have dim sum while sipping tea on the side.
